Sheets needed = total wall and ceiling area / sheet area (32 sq ft for 4x8, 48 sq ft for 4x12), plus a waste allowance of roughly 10% for cuts around outlets, switches, windows, and doors. Rooms with a lot of electrical boxes or windows waste more than a plain rectangular wall with a single doorway.
